Because the Airtrack 20 cm thick is instead of 10 cm you have more possibilities to adjust the amount of spring. Fully inflated, it has the same springing properties as a gymnastics mat, just like the 10cm. But if you let some air out, you get more spring, which makes it easier to learn somersaults, for example.
